It is in the heart of the Kairouan country, in a region where several civilizations of the history of the Mediterranean have succeeded that the family domain Domaine Aghir decided to settle to create an olive grove of a whole new kind where tradition meets modernity. And so it was that olive trees from Italy, Greece, Spain and Tunisia were brought together in one place to offer this land the finest selection of olive trees from the Mediterranean region.
But such richness raised a question: how to turn these olives into oils that would preserve intact all the aromas and attributes of the fruits? This is how our story began, a story that combines an obsession with quality and a race against time.
Traditionally an extra virgin oil is obtained by crushing olives harvested a few days before. Some very good oil producers say "within 24 hours of harvest". At Domaine Aghir we have succeeded in reducing this duration to 1 hour, thus preventing any oxidation of the fruit and at the same time offering oils of exceptional freshness with extremely low acidity (maximum 0.2 °).
